We top off the tour with a trip back to the legendary Southtown Inn and host Bill Evans' signature slow-cooked Macedonian steffado. He'll be moving the pool table aside one more time to fit us all in. I'm still negotiating for an appearance by his mother who is the inspiration (and recipe source) for the Southtown Inn's handful of old world menu items. This dish is not on the regular menu. Bill prepares it a few times a year and let's everyone on his private phone tree know when it's available. Consider yourself on the phone tree...
